Fi’s Chicken with lime and corriander mayonnaise sandwiches

On May 27 my neighbour and I had a morning tea to raise $$$ for the cancer council. We created a desert table with some beautiful sweets but the most talked about item were Fi’s very delicate ‘Chicken with lime and coriander mayonnaise sandwiches’. As promised to those who were there on the day here is the recipe. Fi’s Chicken with coriander and lime mayonnaise sandwiches Inspired by Luke Mangan’s Chicken and Taragon Sandwich from his cookbook – At home and in the mood. You need: 1 Cup of chicken stock 2 chicken breasts Butter Bread ½ cucumber thinly sliced Bunch of rocket For the Mayonnaise: 1 Cup of good quality mayonnaise (or you could make your own). Zest from 1 lime Bunch of coriander, finely chopped Salt and pepper to taste. Do this: Pour chicken stock into a saucepan and add the chicken breasts. Bring to the boil, then turn the heat down and simmer for 5 minutes or until cooked through. Leave the chicken to cool in the stock. To make the mayonnaise combine all the ingredients. Ruth’s Corner – A simple life

I am very excited because I have someone who is coming to play on the Mintspiration Blog you can find her in ‘Ruth’s Corner’. Let me introduce you to Ruth! Australia’s Biggest Morning Tea Dessert Table

This week my neighbour and I had a morning tea to raise $$$ for the cancer council. When she ran the idea past me I think she was thinking a small no fuss affair which is silly really because she knows me better. It had to be a dessert table, there had to be bubbles and no ‘I don’t do instant coffee’. So I made a pretty invitation, we invited some very generous chicky babes and we had a soire on the deck at my place. It was a brilliant morning and with a gathering of 23 we made a very respectable $430 thank you to every one for your company and generosity, I think we will do it again next year, what do you think? A fishy affair party

The photos don’t really do this party justice. We had the fish birthday cake, water melon fish pops, cheese octopus and fish eggs (or grapes). The games consisted of – eating the worm (lollie worms hanging on a string) Hatching the eggs (popping baloons filled with lollie fish)  and the fishing game (rods with magnets picking up the fish). A very fun day. Lucky me for having a four year old and the time and energy to have a fully themed party.

A very cool day in our street

Yesterday was a very cool day, not cool as in cold. In fact the weather was perfect, blue sky, sun shining (as opposed to scorching) and a little balmy in the evening. The day was cool in ‘The Fonz’ kind of way. We had an impromptu talent show in our street and who would of known how much talent we have. Of course I knew about Toby’s arm-pit farts and Tex’s lego talents because they live with me. But the acrobatics, the dancing, the American accents (that is a talent if you are not American), knee farts and even someone who could touch their nose with their tongue. As you can imagine it was an impressive showcase of what we all had to offer. After the talent show all the kids played and the adults chatted and it was all very NICE. Then my fruit and vegie got delivered and this perfect pear was in the box. I put it on display and took some photos. Tex thought I was weird, but that is ok he is not the first person to think I am weird and it is not just flowers that need to be on disply. Here is …

There is only one way to do the dishes

Today I am super duper grateful for perfect weather and a sunset over the ocean which I can see from my kitchen as I do the dishes. Being able to do the dishes and not only see the sunset over the ocean with a beautiful pink sky but to also see my kids playing in the street with the other kids and to hear their laughter and joy and fun and the pleasure of being kids. It is the only way to do the dishes really and I didn’t have many because I have a dishwasher which does most of them.  I am thankful for that too. Big happy sunny smile.

Thank you for the rain

Today I am most grateful for the rain. After such a long summer it is fantastic to have to put on a jumper and to smell the rain and to have wet feet -  I am still wearing thongs, I am not ready to give up summer that easy. I am very happy to be collecting my neighbour’s mail because her Delicious magazine came today and because I knew she wouldn’t mind I opened it. Then I got to read it in peace as Jezz had taken the boys to a camping shop to do boy things. That is way I like having boys, I get to do girl things all to myself. I am so grateful I can cook and that I love to cook. Today I made lamb shank pasties which we ate with the homemade plum chutney I made a month ago. Oh my god I felt like I was in a country kitchen. But it was mine! And now I am grateful my boys are sleeping and I have the night to myself. Big happy sigh.

365 grateful

Today I am most grateful for: synchronicity, don’t you love it when you are thinking something about someone and bang they call you. Or perhaps you start a new project and pow you start attracting stuff that supports your project. Well just last week I started an online gratitude journal and just this week I was over at pips blog ‘meet me at mikes and bingo she is writing about 365 gratitude. Visit it, it is a beautiful project about the wonderful benifits of being grateful. I really do love synchronicity.

Gratitude now

I have so much and still I want. Living in the world of (wanting) more is the road to unhappiness, disappointment, jealously, lethargy,  resentment and a whole plethora of unhealthy emotions. I know this, but still I want… Not all the time, not often but certainly enough and really enough is enough. I declare ‘Gratutude now’ to be gracious for all that I have. To be fair to myself I am gracious often but I am aiming to sharpen my gratitude muscle, I am taking gratitude to the next level. Gratitude is THE KEY INGREDIENT for love and happiness how can we have joy in our live if we are not grateful. In addition to verbalising and having thoughts of gratitude I will be writing them in an online gratitude journal. I figure the online journal will keep me honest kind of like a personal trainer or coach does. Also, some of the things I am grateful for might just  jolt you in the gratitude direction too. Today I am thankful for: a husband who I love and trust who cares about me and puts up with me when I am grumpy. I am grateful that he cooked every meal …

too long between drinks

I am embarrassed and disappointed. Why?  It has been 5 months since my last post. What kind of show am I running here. A lot has happened but really…5 months!I don’t want to be one of those blogs that just fades into the ether, I want mintspirations to be vibrant, exciting, dynamic and well…INSPIRATIONAL! 5 months between drinks is too long. So, I say lets just get on with it, not dwell on the past and start focsing on the here, now and a little bit on the future. After all this is what the essence of coaching is about, moving forwards. Welcome back Mintspirations there are many inspirations to share, I promise to share more from hence forward because just doing this for me and who ever else pops by is actually enough inspiration to keep on blogging.
